Celebrate Christmas with “Sexy Vegan” Radio

The Audible Kitchen Recipe:
Warm Mushroom Salad
▪ 2 large red peppers, cut into large pieces
▪ 32 button mushrooms, stems removed
▪ juice of 1 orange
▪ a little grated orange peel rind
▪ 1 tablespoon maple syrup
▪ 1 heaping teaspoon tarragon
▪ salt and pepper to taste
▪ crisp, green romaine leaves
▪ sesame seeds
▪ 1 to 2 tablespoons margarine
Place peppers under hot grill or broiler until charred all around.
Peel, remove seeds and dice. Sauté mushrooms in margarine for about 3 minutes.
Place the orange juice, rind, maple syrup, tarragon, salt and pepper in a jar with a tight fitting lid. Shake well. Prepare in advance to allow tarragon to release flavour.
Arrange torn romaine leaves on individual dishes. Spoon reheated mushrooms into the center. Arrange reheated peppers around the mushrooms. Spoon the dressing over the salad. Dust with sesame seeds.
