The Audible Kitchen –– Cabbage Rolls.
Recipe: ▪ 1 large head cabbage
Filling: ▪ 5 cups cooked short grain rice (2 cups uncooked) ▪ 1 small finely chopped onion ▪ 1 clove crushed garlic ▪ 1 tablespoon chopped parsley ▪ 1 teaspoon pepper ▪ 1/2 teaspoon salt ▪ 2 tablespoons vegan margarine
Sauce: ▪ 1 cloves crushed garlic ▪ 1 tablespoon olive oil ▪ 1 14 ounce can crushed tomatoes ▪ 1 cup vegetable stock ▪ 1 1/4 tablespoons lemon juice ▪ 1 tablespoon brown sugar
Preheat oven to 350°F.
Prepare the cabbage by cutting out the core. Place the head in a large pot of boiling water for about five minutes. While the head is still in the pot, gently peel back one leaf at time (using small tongs, a fork or [if you’re really careful!] your fingers) placing the leaves in a colander to drain.
Filling: Place the margarine in a sauté pan on medium heat. Add the onion, fry until transparent. Add the garlic, parsley, pepper and salt. Sauté for a few more minutes then add to the cooked rice.
Sauce: Sauté the garlic in a heated skillet with the olive oil for about a minute. Add the tomatoes, stock, lemon juice, brown sugar and simmer for about 5 minutes.
Assembly: Trim ridges of cabbage leaves. Place one cabbage leaf, concave side up, and fill with about 1/4 to 1/3 cup of filling. Roll up the bottom just over the filling, roll each side inward and continue rolling up. Place seam side down in casserole dish. Continue until all rolls are prepared. Pour the sauce over all the rolls.
Bake, covered, for about 1 hour.
