Recipe:
▪ 1 cup soy milk
▪ 1 tablespoon apple cider vinegar
▪ 2 1/4 cups unbleached flour
▪ 1 tablespoon sugar
▪ 2 teaspoons baking powder
▪ 1/2 teaspoon baking soda
▪ 1/2 teaspoon salt
Preheat oven to 350°F.
Pour the apple cider vinegar into the soy milk and set aside.
Place the flour, sugar, baking powder, baking soda and salt in a large bowl and mix. Add the curdled soy milk (it will be lumpy!) to the dry ingredients and mix just until it becomes doughy.
Line a baking sheet with parchment and sprinkle with flour.
If you don’t have parchment lightly grease and flour the baking sheet. Place the dough, in a slightly flattened round shape, on the sheet, dust with flour and mark it with a big X.
Bake for about 35 minutes. A toothpick should come out clean and the bread should sound hollow when thumped. Place it on a cooling rack so the bottom won’t get soft.
Enjoy with jam, nut butter, your favourite spread or with a warm bowl of soup!
