The Audible Kitchen – Easy Red Beans & Rice.
Easy Red Beans & Rice Recipe: ▪ 1 medium onion ▪ 1/2 green pepper ▪ 2 celery stalks ▪ 3 cloves garlic ▪ 3 15-ounce cans red beans (no sugar added) ▪ 1 15-ounce can fire-roasted tomatoes ▪ 1 teaspoon oregano ▪ 1 teaspoon smoked paprika ▪ 1 teaspoon thyme ▪ 1/2 teaspoon black pepper ▪ 1/4 to 1 teaspoon cayenne pepper (as desired) ▪ 2 teaspoons hot sauce (optional, let your diners add their own!) ▪ Liquid Smoke seasoning ▪ cooked rice
Place a large pot on medium-low heat. Separately mince the onion, green pepper, celery and garlic in your food processor using ‘pulse’ then mix them in the pot with 2 tablespoons of water and let them cook until soft.
Rinse and drain the beans. Place 1/2 of them in processor along with 1/2 the fire-roasted tomatoes and pulse until almost pureed.
Add the bean/tomato mixture and remaining beans and tomatoes to the vegetables.
Stir in the oregano, thyme, black pepper and cayenne. Turn heat to simmer. Cover and cook for 30 to 45 minutes checking to make sure there is still enough moisture to keep it all simmering. If it seems dry, add water tablespoon by tablespoon.
When it’s done add about 5 drops of smoke flavour and stir.
Serve over your favourite rice!
