The Audible Kitchen – Latkes (Potato Pancakes).
Recipe:
▪ 2 1/2 cups potatoes, peeled and cubed
▪ 1/2 medium onion, peeled and chopped into a few pieces
▪ 3 tablespoons medium-firm tofu
▪ 1/4 cup matzo meal
▪ 1/2 teaspoon salt
▪ Peanut Oil
Blend all ingredients in a blender or food processor. DO NOT OVERBLEND. Mixture should have an ‘oatmeal’ consistency.
Let the mixture stand for a few minutes to thicken.
Heat skillet to medium heat (I like to use cast iron pans for latkes.)
Add about 1/4 inch of oil. Drop the latke mixture, using a large spoon or ladle, into the heated oil. Fry for 8 minutes. Turn and fry for another 6 minutes.
Note: if there is no oil left in the pan when turning, add a little more.
The latkes are done when they’re golden brown and the potato is completely cooked. Skillet temperature or frying times may need to be adjusted to get them just right!
Place the finished latkes on paper towels to absorb excess oil.
Serve immediately or refrigerate and reheat later. To reheat place latkes, covered with tinfoil, in preheated 350°F oven for about 20 minutes.
Serve with applesauce or tofu sour cream.
Important: if the oil starts smoking…the heat is too high! Also, be careful not to get splattered with hot oil when adding the latke mixture to the oil or when turning the latkes.
